Maple Chai Overnight Oats are incredibly filling and easy to make! They’re the perfect on-the-go breakfast to prep in advance.
I would say like 85% of the time, my breakfasts are very simple; eggs and a meat (usually bacon, but sometimes sausage links). Or a breakfast hash with eggs. Always, eggs…the side changes. Sometimes coffee, and sometimes tea. But almost always eggs.
But the other 15% of the time, I want something different, and that’s when I tend to meal prep a ton of overnight oats! Overnight oats are so easy. You make them the night before, and they’ll keep all week. And if you’re not prone to spills, then you can probably, gracefully eat your overnight oats in the car before work. I am not one of those graceful people that can do this without spilling on myself, so I either eat oats at home, or once I get to the office. I know what I’m about, friends.
Anyway, these Maple Chai Overnight Oats are my latest ob-seshhhh-ion! They scream, “FALL!” to me, and with so much coming up next week [HOW IS IT THANKSGIVING NEXT WEEK?!] I need easy, and it really won’t get any easier than these oats.
So here’s the thing; once you master the art of overnight oats, you’ve kind of got it down. Really, in order for rolled oats to, ‘cook’, they just need liquid. Technically, you could use water, but um…boring and nothanks. I tend to use almond milk, but you could use coconut milk, tea or coffee, cow’s milk…whatever you want! And now here’s my other fave way to cook oats. I add in thick Greek yogurt for a little extra protein. Plus, the yogurt adds a creaminess to the oats that make them almost taste like pie. But like, healthy-ish pie! But if you can’t have dairy, honestly omitting the Greek yogurt won’t be the end of the world, I promise.
Topping ideas for overnight oats:
- chia seeds
- coconut shreds
- almonds
- cocoa nibs or chocolate chips
- apple butter
- granola
- fruit
Usually, I’ll add in a little raw honey for sweetness, but we have a ton of maple syrup for some reason [actually I know the reason, it was to make these pancakes, and Jason bought the giant bottle from Costco last month and now we have like allllll the maple syrup], but I feel like maple and chai go so well together, and taste so comforting together, that adding in maple syrup was the best idea ever.
I used little weck jars for these photos, but I’ll be honest these little baby tulip jars would not actually fill me up. One serving of these Maple Chai Overnight Oats is 1/2 cup, so store in larger weck or mason jars to keep fresh for the week. Double or triple the recipe depending on how many servings you want for the week, or for your family. Then you add your favorite toppings in, and you’ll be full until lunch!

maple-chai overnight oats
Ingredients
- 1 cup rolled oats
- ½ cup almond milk - any milk will do
- ½ cup Greek yogurt - I used 2% fat
- 1 tablespoon maple syrup
- 1 tablespoon chai spice mix
- optional toppings at serving: almonds or pecans - chia seeds, unsweetened coconut, extra maple syrup
Instructions
- To a mixing bowl, combine rolled oats, almond milk, Greek yogurt, chai spice and maple syrup. Mix well to combine.
- Divide mix into two jars, and cover with a lid, or plastic wrap. Refrigerate at least 2 hours, up to overnight.
- Grab and go, or add additional garnish before digging in!
