ALMOND BREADED PORK CHOPS
As a grown-up, it’s just as easy to make your own breaded pork chops, that don’t require a box. I make these Almond Breaded Pork Chops quite a bit. Jason loves them! They’re nutty from blanched almond meal, and comforting, and virtually guiltless.
When I first made these a few years back, it wasn’t AS easy to find almond meal in the grocery as it is now. I used to buy in bulk on Amazon, but now you can find pretty much anywhere. And honestly, this brand is my go-to and I typically can find it at Walmart (shockingly) – but please use any brand you like. I do suggest blanched, because it’s ground more fine, which means less clump for your breading mixture.
Before air fryers were a thing, I would bake these pork chops in the oven. Now I love to air fry them instead! But below you’ll find the method for this pork chop recipe using your oven as well.
HOW TO MAKE SURE YOUR (gluten-free) BREADING DOESN’T STICK
When baking with gluten-free flours, it’s common for your breading to to stick to the baking sheet or sometimes clump together. Whether you bake or air fry this recipe, make sure to refrigerate for 10-minutes after breading, before cooking.

Sometimes I use this same method/low-carb breading for baked chicken breast too. It’s really so easy, versatile, and super flavorful. I also add Parmesan cheese – because, why not? This time of year, my fave side to prep with these pork chops is a batch of Smoked Gouda Cauliflower Casserole – and honestly, I make that the day before, and reheat when it’s time to eat. I’m allllll about easy.

Ingredients
- 16 oz Center Cut Boneless Pork Chops (4 chops)
- 1 cup blanched almond meal
- 1 large egg, whisked
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 4 tablespoons Parmesan cheese - omit if whole30/paleo/dairy-free
- 1/2 tablespoon salt
- 1/2 tablespoon pepper
- nonstick cooking spray - if using air fryer only
Instructions
oven method
- Preheat oven to 350 degrees F.
- To a plate, add almond meal. Add dried spices and Parmesan cheese, if using. Mix well.
- To a separate bowl, whisk one egg and add to a bowl (use a bowl large enough to for pork chops).
- Dip each pork chop into egg wash, and then coat in almond meal mixture. Once all four chops are breaded, refrigerate for 10-minutes before cooking.
- To a parchment lined baking sheet, add your four breaded pork chops. Cook for 30 minutes, flipping half-way through.
air fryer method
- Preheat your air fryer to 370 degrees F.
- To a plate, add almond meal. Add dried spices and Parmesan cheese, if using. Mix well.
- To a separate bowl, whisk one egg and add to a bowl (use a bowl large enough to for pork chops).
- Dip each pork chop into egg wash, and then coat in almond meal mixture. Once all four chops are breaded, refrigerate for 10-minutes before cooking.
- Spray air fryer basket with nonstick spray. Cook for 10-12 minutes on 370F, flipping once halfway through.

It was easy and flavorful but way to much salt and pepper. Definitely will cut back on both. Also I had to put the temp to 400 before it would start to brown in my air fryer. I did pound my chops to 1/4 inch thickness and added 1 T Dijon mustard and 1T almond milk to the egg mixture. Definitely will make again.
